JEAN SEIGNALET worked as a doctor and professor in the Montpellier Hospital (France). He was the administrator of the renal graft department during 30 years, and a pioneer in organ transplantation, especially renal. His wide knowledge as a doctor and biologist allowed him to create a global theory that related a big part of autoinmune diseases with modern diet, designing a diet that aplied with success to his patients. At first, he designet a diet to eliminate the possible stimulators of the immune system in autoinmmune diseases, specially in reumatologic ones: rheumatoid arthritis, ankylosing spondylitis, Behcet disease… The good results obtained moved him to apply his diet to autoinmmune diseases from othes specialities, and after that even to other diseases of unknown cause. The results are shown here. In 1998 published “L´Alimentation ou la Troisième Médecine” (Alimentation, the third medicine) where he exposes the basis of a healthy diet, and healing/preventive for many diseases.
JEAN SEIGNALET sets his proposal of diet following a basic idea: some modern foods are modified from “ancestral” ones, whereas our digestive system has not modified. This modification of the food is given by the genetic mutation caused by agriculture, in the case of some cereals, or by cooking at high temperatures, that modifies the protein structure. Thus, the proteins we eat may not be digested completely, altering the balance of the intestinal flora and passing from a fermentation flora (fisiologic) to a putrefaction flora (non fisiologic). This alteration of the flora and of the intestinal content creates toxins that are absorved and disturb the body balance. This alteration may be given by the elimination of the excess of toxins, in the case of the elimination diseases, by the accumulation of this excess of toxins, in the accumulation diseases, or by the stimulation of the immune system by strange proteins, in the case of the autoimmune diseases. The philosophy of the diet involves eating non-modified foods, that are completely assimilable.
Basic principles:
- Exclusion of cereals, with some exceptions.
- Exclusion of dairy and dairy products.
- Preferential consumption of raw products (more than 70% of the diet should be raw).
- Use of virgin oils, obtained by cold pressure.
- Priority to biologic products.
- Frequent consumption of probiotics.
EXPLANATION:
1.- Cereals:
– Modern cereals are forbidden, as they are mutated because of agriculture selection. It is known that modern wheat has 21-23 cromosomes, whereas “ancestral” wheat had 7. This modification affects the protein structure, that can act as a toxin not being completely digested. This toxins act in the intestine too, modifying the intestinal flora and creating a putrefaction flora that affects the intestinal wall and creates even more toxins.
– Wheat is dangerous, for the reasons above. Thus, foods containing it must be eliminated: bulgur, cus-cus, italian pasta, cakes, bakery… Farro is not admitted, because despite being sold as “ascestral” wheat, it has 22 cromosomes. Kamut isn´t valid neither for the same reasons. Only the variety minor escanda is valid, because it contains 7 cromosomes.
– Corn is dangerous for the same reasons that wheat: the original plant measured half a meter, whereas the modern plant measures 3 meters high.
– Barley, rye and avoine are from the wheat family: must be excluded.
– Rice is accepted. It has remained in his wild prehistoric form, and the clinical experience proves that it´s rarely harmful, even cooked.
– Buckwheat is very well-tolerated by the patients and is allowed. Probably sesame is very good too.
– About the african cereals (millet, sorghum…) and others (amaranth, quinoa…), Seignalet doesn´t have a clear opinion. They are probably inoffensive, as have never reached masive farming. Recent studies show that millet is also probably a mutated cereal, and so should be excluded.
– It is possible to use flour, but from the accepted foods: buckwheat flour, quinoa, soya, chickpea, rice, banana…
– Thus, the traditional italian pasta is not allowed (made of wheat semolina), nor cus-cus, nor bulgur. Many other foods also contain wheat of other forbidden cereals; carefully read the ingredients on the labels to be certain.
– The corn and wheat starch are allowed, as they don´t contain proteins if purified.
2.- Dairy and dairy products:
– Cow´s milk is a very nutritive food…for a growing calf. Humans just can digest milk from our species, and during the lactancy period. The main protein from milk, casein, is hard to digest completely by humans, creating the problems mentioned above.
– Dairy is forbidden (cow, sheep, goat…), and dairy products as well (butter, cheese, cream, yogurt…)
– This supresion doesn´t provoke a calcium deficiency, as the foods we eat are already rich in calcium, and the body will absorb calcium depending on its needs. More information here.
– Soya milk and yogurt are good substitutes for classic dairy. Other vegetable milks are also available: almond, hazelnut, rice…
3.- Meat:
– It´s preferable to eat raw meat (carpaccio, steak tartare…) or just a bit done.
– Raw grocery is allowed (parma ham, sausages, salami…) and cooked grocery is forbidden (cooked ham…).
– True foie-gras (goose – duck liver ) is allowed, as its fat is known to be healthy. Common paté isn´t, because it usually contains milk and flour.
4.- Fish:
– As for meat and eggs, the less cooked, the better. However, cooked fish is less dangerous than cooked meat. It can be steamed or cooked at low temperature.
– Shellfish is allowed. And if eaten raw (oysters…) even recommended.
5.- Eggs:
Better raw or poached, never hard-boiled.
6.- Greens and fruits:
– All greens and fruits are allowed (and recommended). They should be eaten in big quantities.
– Pulses or leguminous are allowed the same as greens, it´s admitted as an exception cooking in a pressure-cooker.
7.- Dry fruits:
He advises to eat a lot of them: figs, dates, almonds, walnuts, hazelnuts, olives…But always raw, never toasted.
8.- Other foods:
– Seignalet advises eating honey and pollen. Also aprouted grains of leguminous (soya, lentils…).
– Chocolate has to be black, biologic and with brown sugar or other natural sweeteners (agave, maple syrup, honey).
– White sugar must be eliminated and replaced by brown sugar, much richer in minerals and vitamins.
9.- Oils:
Seignalet recommends the following oils:
– olive oil because it contains monoinsaturated fatty acids.
– walnut, soy and canola oil that bring alfa-linoleic acid.
– onagra and borage oil that bring beta-linoleic acid. But any oil is good whenever it´s virgin and extracted by first cold pressure.
10.- Condiments:
All allowed: salt, pepper, vinegar, lemon, garlic, parsley, mustard, curry…He recommends to limit the salt consumption and not taking refinated, but complete salt (Maldon salt, Himalaya salt…)
11.- Drinks:
– Tap water and mineral water bring us oligoelements and minerals.
– Drinks rich in white sugar are excluded: soda, commercial juices.
– Beer is excluded, because it contains barley proteins.
– Coffee and tea are tolerated in reasonable quantities.
– Achicoria consumption is recommended.
– All alcoholic beverages are allowed (beer excluded) in moderated amounts.
OTHER RECOMMENDATIONS
– Avoid as much as possible cooking food. It´s important to eat as much raw food as possible (over 70% of diet should be raw), and when cooking is necessary/inevitable, temperatures shouldn´t overpass 110Cº or even 100ºC, preferably steaming. Over this temperature (and specially over 200ºC) a lot of mutagens, Maillard molecules and isomers are created, that turn into toxins once inside our body.
– It´s allowed to fry very lightly, stewing, steaming or dehydrating, because all of these methods don´t reach high temperatures.
– Frying is not recommended if 200ºC or more are reached, nor is oven-cooking, which can even reach 280ºC.
– Eat smoked foods with moderation because of the carcinogen effect in the stomach.
COMPLEMENTARY MEASURES OF THIS DIET
– Not smoking.
– Doing physical exercise as a routine
– Taking probiotic products to regulate intestinal flora.
This is a diet that needs the person to understand the reason that lies under this type of alimentation, and then using his intelligence and willpower to follow it correctly.

There is an excellent book written by a french immunologist (university professor) who had a very bad case of athritis which has been completely resolved with the hypotoxic diet. I learned of Seignalet’s research on diet only recently and am grateful for any information on it that is translated into English. So thank you for this.
Seignalet diet is the same which I advice for my patients, except the fact that I advice to take white meats such as fish and sea foods in steamed form (chicken should be organic source), most part of the diet should be raw & fresh foods, Dry nuts should be soaked for 3 hours to make easy digestion.
Dr Ashna Rani, I´m beginning to notice that many people follow this diet, even if they know nothing about Dr. Seignalet. It seems they have reached the same conclusion by different ways. In the spanish version of the site (which is much more complete; I haven´t got the time to write two times) I have a section called “Experiences”, where people explain their experience with the diet. Many people did it in an intuitive way, and noticed the change. So they went on ´till today.
I find it important to divulgate this diet, because I think it can help many people.

I advice some mild spices to use to evacuate the gas and allergens developed from gluten, such as aniseeds, ginger, pepper, garlic in their diet. and to start with flaxseeds oil capsules 1000mg three times a day.

Being an experienced acupuncturist with a earlier history of rheumatoid arthritis, I’m now a passionate advocate of Taoist five element food energetics and horare clock (biorhythmic) eating strategies. My only concerns are based on my clinical and personal experience, which confirm that Dr. Seignalet’s conclusions and recommendations are not ideal for everyone, particularly people who are blood deficient and/or spleen qi deficient, which is increasingly common in many western cultures today, paritially due to current habits, such as ‘eating on the run’, eating while focussing on other activities that distract us from relaxed, meditative and nurturing eating consciousness (i.e. overthinking, reading, watching television, working, computer activity, driving), being emotionally uneasy and highly stressed, drinking too much water or digestive disrupting fluids such as coffee & black tea, eating foods that are out of season or not native to the region we live in, eating too late in the evening, not eating healthy breakfasts, overeating, over-reliance on antibiotics, etc. With Blood deficient or Spleen Qi deficient people, I usually recommend eating food that grows easily in their local region and is in season, and cook their food by steaming or making soups and stews using ‘slow & low’ heat procedures, especially during cool, cold or damp weather.
Another excellent reference book that you may like to add to your home library recommendations is ‘Healing with Whole Foods’, by Paul Pitchford, which I recommend often because it’s a comprehensive, easily understood publication that explains well the Taoist five element food energetics, dietary philosophy, along with Western research on health and nutrition. With Taoist philosophy, diet and nutrition is seen as the first medicine. It’s interesting that Dr. Seignalet regards it as a “third medicine”…

I am living in England but here nobody offered me any sort of help and I had to see a Doctor in France to learn about the diet.
We really need to spread the word here so people will understand how we can all live better.

I started the diet only few weeks ago but yes I can feel some changes. I feel less tired and less depressed, and I have lost a bit of weight on the plus side.
Hopefully with time the pain will decrease as well, my hope is to stop medication if its possible. According to the results so far, I am pretty confident !
For now the most difficult part is to change my eating habits and find food I really want to eat, there is a lot of work to be done there.
By the way I tried quinoa today, not bad at all !

Being French, I heard about this diet many years ago. I followed it in 2007 for 4 months and not only did I manage to get rid of chronic candidiasis (thrush), I also felt about 10 years younger. The candidiasis probably caused me to have a leaky gut and 6 monhs ago, I started having oteoarthritis. Difficulties to walk, stiffness, painful hands and elbows. I decided, a month ago, to go back on the same diet and started feeling considerably better after just 2 weeks. From what I read on French forums, it will take about a year to get back to normal. I’ve heard of people who completely cured different types of arthritis just by changing their eating habits.
It’s really worth trying !

Excellent and informative blog. I have translated a guide to the Dr. Seignalet’s original book (which I will be translating in due course)”. The guide is written by Dr. Seignalet’s two daughters, one of whom is a doctor. It explains the science in Dr. Seignalet’s original book in easy to understand terms and it has references to the original book for more information. It tells you how to follow the diet and contains recipe suggestions and menu plans.
The guide contains all Dr. Seignalet’s tables which give results for each disease. The tables are a real eye opener. No one could doubt that the diet works after reading those tables.
The book is called: “How to prevent and reverse 100 diseases the new French way with Dr. Seignalet’s diet miracle”. It’s available in paperback and kindle on Amazon. it is currently free on Amazon Kindle Unlimited for a limited period.
I am a health nut myself and I have written a chapter in the book on where to source REAL raw food. Did you know that nuts, seeds, pulses, quinoa, buckwheat, rice etc. etc.is routinely sterilised by heat treatment if organic and with a carcinogenic solvent (yes really!) if not organic. Don’t think that organic packets that you buy in health food shops have escaped this treatment. Unless the label says “truly raw”, the stuff has had this nasty treatment. In my chapter I tell you how to source truly raw and how to verify that it IS truly raw.

A friend in France who suffered for many years with rheumatoid arthritis converted to the Seignalet diet and is now pain free and medication free.
Hello,I have RA and, until recently, have been on M traxate, Enbrel, Tramadol and Paracetamol for 12 years. This treatment was stopped by my RA doctors owing to serious side effects. I turned to the Dr. Seignalet diet and after 3 months I am off of my treatment and now have little or no pain. I know this is quite a short time but in the past, a month with no treatment owing to infections, has resulted in RA flareups. Up until now I have had only one painfull episode owning to my own stupidity, I carried a heavy object and strained my shoulders and back, other than that I carry on a normal active pain free life sticking ridgidly to the diet ie. NO CEREALS or DAIRY PRODUCTS. I have a new lease of life. I am now 70. So many thanks to those who introduced me to this new regime. We need more research into what we eat

I have been taking small quantities fine quality cold water Norwegian fish oil or cod liver oil. Is this acceptable with the Seignalet diet ?

To answer your question, yes, fish oil is part of the diet. Cod liver oil not mentioned but I think it would be ok. Make sure you get the Carlson brand. It is made from fish caught in Arctic waters and therefore not poluted with mercury. Here is the bit of the diet dealing with supplements:
Fish oil, flax seed oil and borage and evening primrose oils. A multivitamin.

Hi Philip, as far as I understand, oats are mentioned…only they are called “Avoine” (name for oats in French)!
I have followed the Hypotoxic diet for almost 2 years now. (not as strictly as recommended, but I left ALL gluten and dairy out of my diet.) I was diagnosed with osteoarthritis in my spine. I had severe pain in my lower back and my neck and my right knee and had days where I found it hard to get out of bed in the morning. Within one month my pain had reduced remarkably and after 6 months I was pain free and felt greatly energised and 20 years younger (I am 54 years old). Even my finger knuckles have reduced back to normal. My rings fit again.
I also used to have tenderness in my breast and had cysts. This has also disappeared. I am so grateful!!!! and hope that many of you will have similar improvements. Fran from Australia
Can I suggest that all oils consumed should have an even omega 3 to omega 6 ratio. Too much omega 6 is inflammatory where omega 3 is anti-inflammatory. This would eliminate canola oil, corn oil, vegetable oil, rapeseed oil, (these are the most genetically modified foods on the planet and the so called vegetable oil has petroleum products in it). Consuming only cold pressed, virgin oils are healthiest (coconut, avocado, olive, nut oils,) and rendered animal fat such as lard, duck fat, beef tallow
